Thank you for returning to the Body & Soul Therapies website. I trust that you all had a stress-free, relaxing and fun-filled summer. I am always happy to hear your comments and to learn of your different experiences regarding your health, fitness and self-development. I have been doing a tremendous amount of traveling over the summer and have developed some exceptional relationships with other health professionals, holistic practitioners, spiritual leaders and artists. I have also developed and tested my wonderful Custom Blends™ range of products, which will be available on-line in January.

Title: Spring Cleaning / Summer Shape Up

Since the beginning of the year, most of us have been planning a spring cleaning of our homes, our body temples and our emotional attics. This is also the time of year that we consider the expression “lightening the load”. The question is where do you start?
Taking the first step is recognizing what it is that we desire to change and how to move towards it.

My challenge this year is eliminating certain things from my home, body temple and emotional attic that no longer serve me. I think each of us comes to a point where the old way of doing things, seeing things and saying things is no longer adequate. 

I’m starting with things I can do with my diet.  I’m eliminating yeast causing foods to improve my overall health and well-being. It’s time to realize that attacking the symptoms of dis-ease in the mind, body and spirit is not only ineffectual but leads to more complex problems. Let’s endeavor to work at preventive health by dealing with the source of our health issues and not the symptomatic effects. Seeing ourselves as optimum beings to which balance is restored, and not sick beings needing to be fixed is a major component in moving towards our greater selves.

Here are two recipes to get you started on healthy food with raw and natural goodies. They’re easy to prepare and delicious tasting.

Two Glorious Holiday Vegetable Recipes

VEGETARIAN COLLARD GREENS
Serves 4-6

     
Fresh garlic
1 med Beetroot
1 Red Onion
2 lg Carrots
1 small Fennel
1 lg Red pepper
1 med Turnip
olive oil


   
Wash and cut up 2lbs collard greens and 1 lb kale into 1” x 2”strips. Do not remove the stem in the leaf.

In a large stockpot, saute garlic and onions in oil. Add all chopped or food processed root vegetables and add to browning garlic and onions. Saute until all the vegetables have sweated. Add the red peppers.

Add all the Collard greens on top of that. Lower heat to simmer, cover and steam down. Do not add water, the spinach will make its own. Once it reduces down stir so that the vegetables are thoroughly mixed in then add to taste:

Salt & pepper
vinegar
Liquid smoke

Cook for around 10 minutes more or until desired texture, then add some honey. Remove from heat.


PUMPKIN AND GREEN BEAN STEW
Serves 4-6


Grind together to make a paste with:

2 garlic cloves, peeled
2 slices fresh ginger, peeled
2 fresh red chili peppers, seeded and sliced
1 tbsp of fermented black beans, rinsed
(I use canned black beans with a little
miso paste mixed in)

Heat together in a deep frying pan and gently fry along with the chilli paste for 3-4 minutes.

2 tbsp vegetable oil
2 shallots, peeled and finely chopped

Add, and mix it with the paste.  Cover with a lid, and stew for 5 minutes.

14 oz pumpkin or squash flesh, cut in chunks

Add half the stock and cook until tender approximately 10 minutes.
7 fl oz vegetable stock or water

Add, and cook for a further 5-7 minutes, adding more stock if necessary

9 oz green beans, prepared (use young runners, French etc..)

Season to taste with soy sauce, and serve garnished with coriander

2 tbsp soy sauce
2 tbsp roughly chopped coriander
